History

This 2009 blend is made from vines with very low yields, carefully selected by Dominique Giroud. It has Merlot for its structure, Syrah for its spiciness, Humagne Rouge for its sturdy tannins, Cabernet Sauvignon and Cabernet Franc for its fruit and Cornalin for its finesse.

The meticulous blend undergoes one year of wood aging in order to obtain a unique red wine that will please the true connoisseurs.

Winemaking

The extended maceration of 25 days allows the gentle skin extraction of colour, tannins and structure of this red wine. This is followed by 12 months of oak aging in 400-litre barrels, during which the malolactic fermentation occurs.

The wine is aged in 3 barrels of different age respectively: new barrels, 2-year-old barrels and 3-year-old barrels.

Merlot, Syrah, Cabernet Sauvignon, Cabernet Franc, Humagne Rouge, Cornalin.

Colour

Intense violet red.

Nose

The intense bouquet suggests wild blackberries, liquorice, blueberries, spices and an espresso roast note.

Palate

Fruit replay, especially small black berries, underlined by firm and well-integrated tannins. Rich, full-bodied mouthfeel displaying fruit, liquorice and roasted oak flavours along with a nice aromatic complexity. 

Food pairings

Constellation is a fantastic match for red meats, wild poultry, game, lamb and some cheeses.
