Winery
Borgo Maragliano is situated at 450 metres above the sea level, on a natural terrace of the Langhe Hills, in the heart of Loazzolo, a particular area crossed by the Marin, an onshore wind coming from the Mar Ligure which favours the maturation of the grapes, enhancing the aromas and the fragrances.
Borgo Maragliano includes an area of 21 hectares of vineyards and the wine is vinified, bottled and packed by the members of the Galliano family who preserve a great respect for the traditions but at the same time make use of the most modern vinification techniques and methods with a new and efficient equipment.
Winemaking
The Pinot Nero grape (80%) in the right combination with the Chardonnay (20%) grape gives origin to this sparkling wine with its own marked and distinct personality.
The wines obtained from these two different vines form, in the month of March of the year which follows the vintage, the wine base which is then bottled.
The wine base has been sugared and added of yeasts before being bottled and it achieves the re-fermentation in the bottle.
At the end of this process which produces the characteristic perlage, we assist at the maturation on the yeasts which lasts about three years. After this period of time, the procedures of “remuage” and “degorgement” prepare the wine to be drunk. The final product is ready to be consumed after more than three years and a half from the time the grape was harvested.

Nose
The aroma of this wine is complex with distant and vague remembrances of fruit, pleasant fragrances of yeasts and crust of bread, almond.
Palate
Surprising gustative effect which ends pleasantly with a bitterish sensation.
Food Pairing
Excellent as aperitif and delicious as a sparkling end in any situation.
It matches with delicate hors-d’oeuvres, savoury first courses and elegant second dishes.
